Suggested Use

The Camellia Sinensis (tea plant) is a green shrub, whose leaves, if not immediately dry after picking, quickly begin to oxidize. The leaves become progressively dark (oxidized) as the chlorophyll breaks down. In green tea there is no oxidation, it is stopped by applying heat, either through steam (traditional Japanese method) or in hot trays (traditional Chinese method).

This plant is extensively cultivated around the world, particularly in Sri Lanka, India, China, Japan, Taiwan, Kenya, Cameroon, Tanzania and Malawi. In Portugal, this plant is cultivated in the Azores archipelago, especially on São Miguel Island. Most green teas, however, are produced in China and Japan and therefore kept their name in Japanese or traditional Chinese: Sencha, Matcha, Genmaicha, Houjicha, Pouchong, among others.
